SOO-YEUN LEE MAY HAVE DEVELOPED THE PERFECT BREAKFAST. The researcher from the university of Illinois has developed a cereal that meets the requirements for three different FDA health claims - High Protein, low fat and high fiber.

It is the perfect breakfast that leaves you feeling so full that you won’t have to eat again until lunch. Unfortunately most people consume food high in carbohydrate.

Soy protein is very high-quality protein. Diets high in soy protein are effective in combating obesity. Research also shows that soy decreases the risk of breast and prostate cancers and lowers cholesterol and triglycerides.

The problem with products having high soy content is that off-flavors and off-textures often develop, which result in less consumer acceptance of the products.

Lee’s cereal passed the taste test of her 120 people sensory panel. A second consumer evaluation pitted her cereals against five cereals that are already commercially available and marketed for their healthful properties. One of her formulations did better than one of the five brands.

Lee is still tweaking with different flavors and sweeteners. She is confident that her soy-based, high-protein cereals will not only be nutritious but will also taste good.
